Tasty Thai Chicken Lettuce Wraps

Ingredients:

  • 1 tbsp sesame oil
  • 1/4 cup onion diced
  • 2 cloves of garlic
  • 1 tbsp fresh minced ginger
  • 1 lb ground chicken
  • 1/2 cup mushrooms chopped
  • 1/2 cup water chestnuts chopped
  • 1/4 cup coconut aminos
  • 2 tbsp Thai red chili garlic sauce
  • juice of 1 lime
  • 1 tsp agave
  • 1/4 cup green onions chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup shredded carrots

Toppings:

  • chopped green onion
  • sesame seeds
  • chopped peanuts
  • avocado slice
  • jalapeno slices
  • mini cucumber slices
  • lime wedges

Steps:

  1. Heat pan over medium heat and add sesame oil. Once the oil is hot, add in onions and cook for 2-3 minutes. Next add garlic and ginger, allow to cook until fragant, about 2 minutes.
  2. Time to add the ground chicken to pan. Break up the chicken using a spatula or wooden spoon. I like to get the meat is be pretty fine kinda like a ground beef taco would be. Cook until golden brown about 4-5 minutes. Now add mushrooms and water chestnuts, combine all together and cook another 4-5 minutes.
  3. Meanwhile in a separate bowl combine coconut aminos, Thai red chili garlic sauce, juice of 1 lime and agave. Stir well and pour over chicken mixture. Reduce heat to low, add green onions, cilantro and carrots and cook another 4-5 minutes. Remove from heat and let cool slightly.
  4. To make lettuce wraps, open lettuce leafs and add a spoonful of chicken mixture and all the toppings, if you want. It’s so refreshing and delicious you will love it!
