Ingredients:

2 cup spring mix

1 cup quinoa

1 cup chickpeas

3 tbsp feta cheese

1 tbsp pumpkin seeds

1 tbsp hemp seeds

1 tbsp pistachios

1 cup blackberries

1 tbsp avocado oil

balsamic glaze to drizzle

sea salt to taste

Steps:

  1. In a large bowl, I like to use this wooden bowl I purchased off Amazon. It’s great for salads. Start by adding spring mix, quinoa, chickpeas, and feta cheese.
  2. Next sprinkle pumpkin seeds, hemp seed and pistachios all over. Top with blackberries.
  3. Time to drizzle avocado oil and balsamic glaze all over. Season with a little sea salt, and enjoy!
