Add Some Spice to Your Dinner Routine with Arroz Con Pollo
This classic dish is not only delicious but also easy to make, making it a great option for busy weeknights or for those looking for a satisfying meal without a lot of fuss.
Ingredients:
1 tsp sea salt
1/2 tsp dried chives
1/2 tsp garlic powder
1/2 tsp cumin
3/4 tsp ground turmeric
1/4 tsp cracked black pepper
4 tbsp avocado oil
4 boneless skinless chicken thighs
1 medium red bell pepper, diced
1 small white onion, diced
3 cloves garlic, finely chopped
2 cups rice
3 cups chicken bone broth
1 cup frozen peas
1 cup olives
3-4 bay leaves
handful cilantro, chopped to garnish
lime wedges to garnish
Steps:
- Marinate chicken with sea salt, dried chives, garlic powder, cumin, ground turmeric and freshly cracked black pepper for at least 30 minutes if possible overnight.
- Preheat a medium-size pan with avocado oil over medium-high heat. Once the oil is very hot add chicken thighs and do no touch or move for 7 minutes. Flip and cook another 4-6 minutes until chicken is cooked throughly.
- Remove chicken from the pan. Reduce heat to medium. Add bell pepper and onion to the pan. Cook, stirring occasionally about 5 minutes. Add garlic, cook, stirring 1 minute.
- Add rice and cook stirring for 2 minutes. Add bone broth, peas, olives and stir to combine.
- Return chicken to pan, raise the heat to high and bring broth to simmer. Cover with lid, reduce heat to low and cook for 20 minutes.
- Remove from heat and let sit for another 10 minutes. Add cilantro and serve with lime wedges. Enjoy!
